I've built a Watchy - from https://watchy.sqfmi.com/ - it's a bit fiddly to set up. Here are my first impressions.

    I’m sure they had their reasons for choosing eink, but the Sharp memory displays are really the right thing for live user interaction with low power. (That’s the display used in the original Pebble watch, and they have only gotten better.)
